I will be sharing with you guys my Mother-in-law’s easy and simple Vietnamese lemongrass chicken recipe using Open Nature® Air-Chilled Chicken. This recipe is so versatile. You can eat it with rice, noodles, or even in a banh mi (Vietnamese sandwich).

Air-chilled chicken is a method of cooling chicken to U.S. food safety regulations, which results in juicier chicken meat and less chance of cross-contamination.

Easy and Simple Vietnamese Lemongrass Chicken

Ingredients

  • 1 lb Open Nature Air-Chilled Chicken Breasts
  • 1/3 cup Low Sodium Soy Sauce
  • 1/3 cup Sugar
  • 1/2 teaspoon Pepper
  • 2 tablespoons Lemongrass (Approx. 2 stalks)
  • 2 tablespoons  shallots (2-3 small onions)
  • 2 teaspoons sesame oil
  • Optional: Rice, Cucumber, Tomatoes, Scallions, Fish Sauce, Fried Egg

Cooking Directions

  1. Make the marinade: mix soy sauce, sugar, pepper, and sesame oil together
  2. Chop up lemongrass and shallots finely. Add ingredients to marinade and mix well
  3. Slice chicken into thin horizontal pieces. For one chicken breast, I sliced it into two to three thin pieces
  4. Marinade chicken with sauce for at least one hour or overnight if time permits
  5. Add 1 tablespoon of oil onto a grill pan and fry chicken for about 4-5 minutes without touching the chicken to get a nice golden brown. Turn over and cook for an additional 2 minutes or until chicken reaches internal temperature 165 degrees
  6. Serve with rice and a side of cucumbers, tomatoes, and lettuce. Add a fried egg if you desire
  7. Garnish with green onions and enjoy with a side of fish sauce
