What is Vietnamese Egg Coffee?

Vietnamese egg coffee originated in Hanoi due to a shortage of milk during the war. Due to its growing popularity, Vietnamese egg coffee can be found in cafes all throughout Vietnam now.

A typical Vietnamese coffee (ca phe su da) consists of brewed Vietnamese coffee with condensed milk, while Vietnamese egg coffee (ca phe trung) contains a frothy egg mixture. This egg mixture gives the coffee a creamy texture. This Vietnamese egg coffee recipe is super easy to make at home.

Items Needed

For this recipe, you will need these items:

  1. Vietnamese filter phin – In order a traditional Vietnamese coffee, I would highly recommend getting a phin. It’s fun to watch the coffee drip and it gives a stronger brew by using this method.
  2. Robusta / Vietnamese Ground Coffee Beans – I use ground coffee beans that our family gave us from Vietnam. There are a couple of options on Amazon you could try for Vietnamese coffee beans:

How to make Vietnamese Egg Coffee ( Ca Phe Trung)

Equipment

  • Kettle
  • Electric Whisk
  • Mixing bowl
  • Cup
  • Measuring Cups

Ingredients
  

  • 2 tbsp Ground Vietnamese Coffee Beans
  • 1 tbsp Condensed Milk
  • 1 tbsp Sugar
  • 2 eggs

Instructions
 

  • Begin by whisking 2 egg yolks on high with electric whisk in a small bowl.
  • Add 1 tbsp condensed milk.
  • Add 1 tbsp sugar.
  • Continue to whisk on high until egg yolks become pale frothy yellow.
  • Brew your 2 tbsp of Vietnamese coffee using a phin filter in a cup.
  • Add ice to the brewed cup of coffee. Top with egg yolk mixture. Enjoy!
