How to Make Instant Pot Mango Sticky Rice

I am super excited to share how to make Instant Pot Mango Sticky Rice! I was seriously so impressed with how easy it is to make restaurant-quality Thai mango sticky rice at home!

The best part is the ease of making sticky rice using the Instant Pot. There is no need to soak the rice when using the Instant Pot for this version. I hope you enjoy this delicious and easy Instant Pot mango sticky rice recipe as much as I did!

Instant Pot Mango Sticky Rice

Making the sticky rice in the Instant Pot is much easier than making it on the stovetop. Typically when making sticky rice on the stovetop, you will need to soak the rice for up to 24 hours and then steam it. With the Instant Pot, you can skip the soaking step and just let the Instant Pot do all the work!

For those who are newer to Instant Pot, natural release means allowing the Instant Pot to release the pressure slowly by itself. You do not need to do anything. The valve will drop down when all the pressure from the Instant Pot has released and your rice will be ready!

Sticky Rice

Sticky rice is also known as sweet rice or glutinous rice. I will use these terms interchangeably. Sticky rice is used for many dishes in Asia including Thailand, Laos, and Vietnam. It can be eaten with savory foods or used for sweet desserts.

Coconut Milk

You can use coconut milk or coconut cream milk. Coconut cream milk is a little bit thicker so it is also a good alternative for a richer sauce. You will want to use coconut milk used for cooking, not the milk alternative you find in the dairy section. I would recommend getting this brand of coconut milk for your mango sticky rice recipe. You can find it at your local Asian supermarket.

Instant Pot Mango Sticky Rice

Easy restaurant quality mango sticky rice recipe

Equipment

  • Instant Pot
  • Trivet
  • Sauce Pan

Ingredients
  

  • 1 cup sweet/glutinous rice
  • 2 cups water For inner pot of Instant Pot
  • 1 cup water Please see note for water ratio
  • 1 can coconut milk 13.5 fl oz can
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 1 tbsp cornstarch
  • 1 ripe mango
  • sesame seeds

Instructions
 

  • Add 2 cups of water into the Instant Pot.
  • Rinse and drain 1 cup of sweet rice. Place rice in a heatproof bowl and add 1 cup of water to cover the rice. Make sure rice is fully submerged in the water. Place the bowl on top of the trivet into the Instant Pot [see note].
  • High-Pressure cook for 15 minutes and natural release.
  • Combine 1 can of coconut milk, 1/2 cup sugar, and 1/8 teaspoon of salt into a pot on the stovetop. Bring ingredients to a slight boil just to dissolve the sugar.
  • Pour half of the coconut mixture into the cooked sweet rice and stir well. Allow to soak and cool for 10 minutes.
  • In a small bowl, combine 1 tablespoon cornstarch and 1 tablespoon of cold water to create a cornstarch slurry. If you omit this step, the sauce will not be as thick or you can try using coconut cream instead of coconut milk for a thicker, richer sauce. Add this slurry to the other half of the coconut mixture to get a thicker sauce.
  • Peel and slice the mango. Arrange mango on top of sticky rice and add additional coconut sauce. Sprink with sesame seeds and enjoy!

Notes

* For the rice to water ratio – 1:1 seems to be sufficient for most [1 cup sweet rice, 1 cup water]. Depends on how you like the texture of your rice, if you prefer a softer texture, use 1 and 1/4 cup of water.Β

    This was an easy and delicious dish. I used frozen mango as I didn’t have fresh and it came out great. I however am a newbie to Instapot so I was concerned what bowl to put in it. I did some research and used a stainless mixing bowl with out a rubber bottom. Hope this helps other people out. Thanks!!

    I’m excited to make this. My daughter and I love this dessert. I don’t see the direction for what to do after you make the slurry. I’m assuming you put it into the coconut mixture without the rice so it thickens to pour over the top, but I just wanted some clarification on that.

      Hi Alicia! Thank you for your comment. You are correct. Add this slurry to the other half of the coconut mixture to create a thicker sauce. Then add it over the sticky rice topped with your mangos and add some sesame seeds! I hope you enjoy the recipe.
